Once a staple of the Hawaiian diet, Taro is used most famously to make poi. Today there is so little demand for it that the government subsidizes a small taro (Kalo) cooperative to ensure that this part of their culture is kept alive. The view of this coop was stunning and well wroth the roadside stop! January 2005
