What are you cooking for dinner?

I will. Have to make some eggs since I overbought and now I have seventy two eggs waiting to be used LOL I think I'll make scrambled eggs with veggies and rice or noodles.

By the way, frozen grapes chilled me to the bones but were so yummy! Reminded me of Summer too...

I have no idea. I was thinking pasta but I'm not sure. I found a recipe for pasta with spinach and tomatoes but i don't have any tomatoes and I'm not going to the store feeling like this nor with freezing rain outside. ugh. I dunno what to have. I don't even feel like cooking. come cook for me?

Abby has been asking me to fix salmon patties every day since we went grocery shopping. She loves them! I mix chopped broccoli and carrots into them too. Lilly and Camy don't mind them, but it's not their favorite meal.

So, it's between salmon patties or egg muffins. I bought some gluten free english muffins so we could have sausage/egg/cheese muffins.

Whichever I don't fix tonight I will fix tomorrow. We're having homemade pizza Friday.

We had Turkey meatloaf yesterday and I will make tilapia fillets tomorrow. I have lots of choices for sides.

I meant to tell you. I made this concoction two days ago with pumpkin, oats, egg, milk, vanilla and milk. Like a breakfast cake. Didn't know how it would turn out but it was delicious! I'm making another one tonight for breakfast in the morning. Healthy and yummy!

hmmmm maybe I'll save the spinach and do meatloaf tomorrow or friday and have a side of mashed potatoes with a side of spinach....hmmmm, now to figure out what to eat tonight.

Well OK, change of plan. It's nearly 7pm and DH is still at work, and cranky as heck. He wants to stop off and pick up Chinese on his way home, so that's what we're having.

This healthy eating lark just isn't working this week. Next week he's away and you know what? Right now, I'm quite looking forward to it. (Ssssssh, don't tell him I said that!) I love the man, but oh, Mr. Negative-Nellie is getting right up my nose at the moment.

Vivi, this is a recipe from one of my favorite shows. Can't wait to try it. You guys might like it. You can adjust the recipe however you want.

Omurice (Rice Omelette)
•Vegetable oil
•2 cups chopped vegetables (onion, carrots, capsicum, beans, etc.)
•2 cups steamed rice
•1 chopped stalk of spring onion
•1 tbs tomato sauce/ketchup
•1 tbs soy sauce
•1 tsp chilli oil (optional)
•4 eggs
•salt and pepper
•tomato sauce/ketchup

Drizzle a large pan with some oil and sauté vegetables over high heat until just soft.

Mix in rice and spring onion with vegetables and season with tomato sauce, soy sauce and chilli oil (if using).

Set rice aside to fry omelette.

Drizzle a medium pan with oil and pour in 2 beaten eggs, seasoned with salt and pepper.

Fry over low heat and flip to cook the other side (or cover with a lid).

Turn off the heat and wrap the Omurice by spooning the rice onto the centre of the omelette and folding in the sides (about 5 times).

Repeat steps for the second Omurice.

Top the Omurice with tomato sauce/ketchup.

Serves 2

Note: There will be leftover rice as it won’t all fit into the omelette.

Also, small shrimp and ham can be added to the fried rice (as noted in the show) but I felt like going vegetarian for the day and was getting plenty of protein from the eggs anyway.

We always buy 6-8 dozen when we go to the store, but they usually last us two weeks.
