I have about three cups of cherry tomatoes that are going soft and I don't want to throw them away. Do you have a recipe I can use them in? I really want to make something but not a sauce. Maybe a galette or something like that? I don't know, give me ideas!

i would just throw them in a pasta salad, or cut them up and freeze them and add them to a spaghetti sauce at another time.

If they're going soft already, roast them with a little salt, pepper and olive oil. Then you can either eat them as they are, or strain them through a sieve and make beautiful tomato sauce which will freeze.

I will do that with the rest of them Rosey! I ended up using some of them in a ham, cheese and tomato croissant roll thing that I baked. I hope it turned out good, it looks good!

I usually throw them in a pot with salt, pepper and olive oil until they burst, then add chicken stock, herbs and tortelini. Makes a delicious soup. Sprinkle with parm cheese to serve.
