We basically use it as a rice or oatmeal substitute. An example would be a rice pilaf recipe only using quinoa instead.
If you've never cooked with it before make sure you soak it and then rinse it before you cook it.

Yes, we eat it occasionally. Abroad we could get red quinoa which was nicer, but we can't get it here.
Soak, rinse, then either add to soup/stew or add boiling water or stock and simmer without stirring until absorbed.

We don't have to soak it. I don't think my son even rinses it anymore. 
He's about the only one who eats it. I eat it sometimes when I have salsa to mix it into.

the last time i cooked it I cooked it in chicken broth, it was so tasty but others have made it into a salad and let's just stay...yummy!

my favorite recipe is quinoa stuffed peppers from pampered chef. OMG AMAZING!!!! also tried a quinoa spinach pear salad and it was awesome.
