I need help.
Trying to plan our Christmas dinner, and it is not easy. Trying to come up with a main dish that is vegetarian. Here's the problem, no bell peppers, mushrooms, tofu, or eggplant. Also no nuts of any kind, all food allergies for daughter in-law. Pasta is a possibility, but would prefer to stay away from making a lasagna.
I would love suggestions.

How about something made with seeds?

Pumpkin, sunflower and sesame seeds are full of protein and flavour. You could chop them, soak them in stock overnight to soften and flavour, and add them to a vegetarian stuffing mix. Or make your own if the mix has bad things in it. Roll the mixture in puff pastry, bake and serve with gravy and all the usual trimmings and you have a pretty good meal.

DD is vegetarian, so I've been searching for things for her to eat as well. Fortunately for me, she can/will eat those things your DIL will not. We found this recipe by accident, and it's become one of our favorites.(The original called for green pepper, but you can leave it out as needed.)

Zucchini, Black Bean and Rice Skillet

1 Tablespoon Canola Oil
1 1/2 cups sliced, quartered zucchini
1 Can Black Beans, drained and rinsed (We use a no-salt variety)
1 Can Hunts Fire-roasted tomatoes with garlic (undrained
1 Can (16 0z) kidney beans (drained, rinsed - again, we use a no-salt variety)
1/2 C chopped onion
3/4 Cup water
1 Cup instant brown rice (We use Uncle Ben's)
1/2 Cup shredded cheddar/Monterey Jack cheese blend

Heat oil in large skillet over medium heat. Add zucchini and onion; cook 5 minutes, stirring occasionally. Add beans (both kinds), undrained tomatoes wand water. Increase heat and bring to a boil. Add rice, stir well. Cover; remove from heat and let stand 7 minutes or until liquid is absorbed. Sprinkle with cheese.

You can use "regular" instant rice as well, but we like the flavor better with the brown.
We have been known to add a little no-salt garlic/herb seasoning to this, too.

Thanks ladies, I knew I could rely on you for help.

Leaning towards the stuffed shells, Rosey do you think the pumpkin, sunflower seed & sesame seed mix would work as a base for the stuffed shells pasta? Susan, the zucchini, black bean rice dish will work for both vegetarians and non vegetarians.

Will have to run the choices by DS and DIL, to make sure there are no other food allergies in my menu selection.

watch out for sesame, my son is allergic and it is actually a common allergy.

Yes, sesame can be left out quite easily.

Yes it would work as a stuffing for pasta shells Debbie. If you wanted to make it a bit more of a pasta dish and less of a Christmas dish, you could bind it all with vegetarian cheese and serve with more traditional oregano, tomato and olives. Actually, herbs, cheese, olives and sun-dried tomato would make a yummy filling for pastry too. Mmm...

I'm getting jealous of your DIL!

Does she eat milk products? If so you could make pasta with broccoli alfredo. That rice dish looks good too.

Yes, she does eat dairy products. It's just so hard trying to cook meals, when you have to plan around food allergies.

DD reminded me; the stir-fry is good with yellow squash too. We usually go half zucchini/half yellow squash.
