I sooo wish I could stay home all day! It's been too long since I had a stay-at-home day & I'm needing / wanting it badly.

But... I have PT at 9:30 & then will tan & get a few groceries.

I'm not normally one to fake bake, but I have a boudoir photo session scheduled for Saturday & don't want to be as white as my dress in just 37 days!

Need to work on Christmas cards. Stop at PO for priority box when I drop son off for class.
Anything else is iffy even if my house does need cleaning.

Cooking, baking, and working on the photo calendar for my dd's. I'll just have to see how much I can accomplish before I need to take a break.

I ordered their earrings for the calendar this weekend. I ended up getting 20% off too. In the ordering process there was a section for comments and I put something about how it would be nice for them to have a discount for new online costumers. I couldn't find a coupon code anywhere online. When I saw my conformation email they had given me a 20% off discount. Score! Almost $17.

Treadmill in a littl bit then sitting in what is to be little Mr. Brock's room, deciding what to do with it...it was my office...for now he is sleeping in an older pack-n-play,(his gorgeous crib stuck in Georgia), but I am wondering if we should go with a toddler bed...he can climb out of the pack-n-play, but doesn't...stands up and starts hollering NANA, lol, when he gets up...also need to decide what to do with the flooring...its old carpet...I want to rip it up, put down wood or even linoleum, and then a big throw rug, but husband wants me to wait til spring...he is way too busy to help right now with the floor...and, I need a theme...I did hang new camo curtains, and he loves trucks...but I also was thinking Where the Wild things are...as youc an tell, I have lots to decide, ROLFLMBO!

I got started with my cooking and baking. Boiling eggs for egg salad and pickled eggs. I'm also planning on making creamy broccoli pasta salad, shepards pie, pumpkin muffins, and pumpkin pie.

**I made the egg salad, pasta salad, pickled eggs, and got the vegetables chopped for the shepards pie. That's all the standing I could handle even with a pillow up against the counter. Time for a break (I guess.)

***Muffins are in the oven. Then I'll bake the shepards pie, and then the pumpkin pie. To bad that little bit of preparing, cooking, and baking wore me out.

I got some church work done, now I need to get some housework done. Gotta get the boy, then do homework, then figure out what to have for supper, thinking on that now and i'm fresh out of ideas. Wish we could order in but we just can't.

Hubby has hockey tonight and J has had quite a few late nights so tonight it is early to bed.

I don't make mine the traditional way with vinegar and sugar. I just boil some eggs and add a can of beets to them. Not really pickled eggs, but that is what we call them.

The traditional recipe is 1/2c sugar, 1/2 white vinegar, can of beets w/juice, and 8 boiled eggs. I think that's it? It's been awhile since I made them like that. lol

I can do the beets and vinegar but I would have to omit the sugar.

I love pickled beets but not pickled eggs. (I love onions in my pickled beets.) Wonder if i would like the combo? Will try this some day. Not sure I would even try making without sugar though Vivi! Does anyone pickle the eggs with a pinch of turmeric? That appeals to me.
Worked all day, and still have to prepare for conference call he!! tomorrow.
Christmas plan is almost finalized, only Hubby left to fret over. Might have to get my ESP warmed up for him!

We used to pickle radishes in Argentina. You opened the jar after a couple of weeks of pickling and they fainted all the way in China! LOL my grandma never used sugar when pickling anything but I can see why people use it. Vinegar can be quite potent with fermented foods.
