Spicy White Turkey Chili Soup
Makes: 15 cups Active Time: 20 min Total Time: 40 min
2 Tbsp Butter
3 Tbsp Pure Olive Oil
1 pkg (8 oz) Diced Celery and Onions
3/4 cup All-Purpose flour
3 Tbsp chili powder
1 tsp cumin
1/8 tsp cayenne pepper
2 cartons (32 oz each) Chicken Stock
1 medium (about 1/2 lb) sweet red pepper, diced small (about 1-1/2 cups)
2 cans (15.5 oz ea) Cannellini Beans (can use more)
1 medium (about 1/2 lb) green pepper, diced small (about 1 1/2 cups)
1 cup (6 oz) cooked turkey or deli turkey, diced small (we used more)
1/4 cup Heavy Cream
Salt and pepper to taste

Melt butter and olive oil in large stockpot on MEDIUM, until oil/butter mixture faintly smokes. Add celery and onions. Cook, stirring occasionally, 4-5 min, until translucent but not brown. Stir in flour, chili powder, cumin, and cayenne. Cook 1 min, stirring continuously.

Add stock. Bring to simmer; simmer 10 min. Add cannellini beans, peppers, turkey, and heavy cream. Season to taste with salt and pepper; simmer 2 to 3 min until heated through.
